Vegan Sweet Potato Pancakes

Indulge in our delicious Vegan Sweet Potato Pancakes, made with wholesome ingredients and bursting with flavor. A perfect blend of sweet and savory, these pancakes are sure to satisfy your cravings while being completely plant-based.

Vegan Sweet Potato Pancakes


·      1 ¼  cup Cotton Creations Pancake mix

·      1/2 tsp ground cinnamon

·      1/3 cup mashed sweet potatoes

·      1/2 cup + 1-2 TBSP vegan milk

·      2 teaspoons lemon juice or acv

·      1 tsp vanilla extract

·      1 tbsp pure Maple syrup


Maple Cinnamon Glaze:

·      ½ cup powdered sugar

·      ¼ tsp Ground cinnamon

·      2 TBSP Pure Maple Syrup

·      1-2 TBSP Vegan Milk


1. In a bowl, combine Cotton Creations Pancake Mix and ground cinnamon then set aside.

2. In a blender or food processor, combine mashed sweet potatoes, vegan milk, lemon juice, vanilla extract, and pure maple syrup. Blend until smooth.

3. Add the liquid sweet potato mixture to the pancake mix and gently stir until incorporated. Be sure not to over mix, some lumps are fine.

4. Set the batter aside and let rest for 5-10 minutes.

5. Heat a skillet or griddle to medium heat, add vegan butter to the pan, add about 1/4c of pancake batter to the pan. Cook until each side is golden brown.

6. For the glaze, combine all ingredients in a bowl and whisks until smooth.

7. Top pancakes with the glaze and Enjoy!


Freezing Instructions: Make these pancakes in advance and store in an airtight container, freezer bag, or vacuum seal bag for up to 1 month in the freezer. To reheat, wrap in foil or place in a baking pan and cover with foil and place in at oven at 350º and cook until pancakes are hot throughout.
